Freeze-dried fruits have gained popularity following viral videos showcasing bloggers trying them. Demand for these snacks has increased, but experts caution about potential drawbacks. Nutritionist Ekaterina Guzman recently shared insights on their health effects during a TV appearance in Krasnodar.
Freeze-drying removes water while retaining most nutrients. This process preserves B vitamins, minerals, polyphenols, and fiber without needing preservatives. Unlike conventional drying, it avoids high heat and oxygen exposure, which often destroy vitamin C and antioxidants.
However, the process concentrates natural sugars, making it easy to overeat. Guzman emphasized the importance of moderation to prevent excessive sugar intake. She also recommended balancing different food preservation methods for better digestion and nutrient absorption. Traditional freezing retains minerals and some vitamins, but storage and thawing can degrade texture and nutrients over time. Guzman noted that no specific brands of high-quality freeze-dried fruits are widely available in Russia’s consumer market.
