Birch sap, a seasonal drink with a delicate sweetness, is growing in popularity for its health benefits and versatility. Harvested in late March or early April, it can be enjoyed fresh or used in cocktails, smoothies, and traditional beverages like kvass. But experts warn that proper sourcing and storage are key to avoiding risks. Natural birch sap is clear or faintly cloudy, often with a pinkish-brown hue. It has a mild, subtly sweet flavour with faint woody undertones and almost no scent. Authentic sap should never smell sour or taste off.

The drink is packed with nutrients, including potassium, magnesium, calcium, and antioxidants. It also contains vitamins, organic acids, and tannins, which help strengthen the immune system. Some studies suggest it may aid in treating certain conditions, though its mild diuretic effect can dislodge kidney stones in people with urolithiasis. However, birch sap isn’t safe for everyone. Those with allergies, asthma, ulcers, or gastritis may experience flare-ups after drinking it. Spoiled sap becomes cloudy, develops a sour odour, and may leave sediment at the bottom of the container. Experts advise buying store-bought birch sap rather than collecting it directly from trees. Commercial versions undergo heat treatment, extending shelf life to two years when stored between 0°C and +10°C. While this process reduces its nutritional value, it ensures compliance with GOST standards and prevents tree damage. The recommended daily intake is 200–250 grams.

Birch sap offers a range of uses, from refreshing drinks to health-boosting tonics. But proper handling and moderation are essential to avoid spoilage or adverse effects. For safety and quality, consumers are encouraged to choose certified products over homemade collection.
