Health officials are warning bakers to avoid tasting raw dough or batter. The risk comes from harmful bacteria found in common ingredients like flour and eggs. A recent study in Germany found contamination in nearly 10% of tested Easter baking products. The German Federal Office of Consumer Protection and Food Safety discovered STEC bacteria in roughly one in ten Easter baking samples. STEC, a strain of Escherichia coli, produces Shiga toxin and can cause severe gastrointestinal infections. Symptoms include nausea, vomiting and abdominal pain.
Flour and fresh eggs can also carry salmonella, another dangerous bacterium. Both STEC and salmonella survive in frozen foods and acidic conditions, making raw dough particularly risky. Standard hygiene measures, such as washing hands after handling raw eggs, remain essential. To eliminate these risks, thorough cooking is required. Baking, boiling or deep-frying at 70°C (158°F) for at least two minutes kills both STEC and salmonella. Proper oven temperatures ensure that finished baked goods are safe to eat.
The findings highlight the importance of avoiding raw dough consumption. Bakers should follow proper cooking times and temperatures to prevent foodborne illness. Officials stress that these precautions apply to all baking mixes, pre-made doughs and homemade recipes.
