These revisions introduced stricter sanitation, pathogen testing for threats like Listeria and Salmonella, and advancements such as high-temperature short-time (HTST) pasteurisation and electronic monitoring.

California adopted the PMO through the state's Department of Food and Agriculture (CDFA), adding extra safeguards. After outbreaks in the 1980s, the state banned raw milk labelling and strengthened antibiotic residue testing. Today, California enforces Grade A standards and even pilots blockchain traceability, set for full rollout by 2025. Testing is carried out by the UC Davis California Animal Health and Food Safety Laboratory, under CDFA's Milk and Dairy Food Safety Branch.

The safety process begins on farms, where animal health, sanitation, and biosecurity protocols form the first layer of protection. Milk is then monitored during transport and at processing plants, with further checks before it reaches shops. This farm-to-glass approach reflects California's commitment to science-backed regulations, supported by dairy producers and processors.

Beyond safety, milk provides essential nutrients that aid growth, bone health, learning, and overall wellbeing. National Milk Day, observed annually, marks the introduction of sterilised glass bottles for home delivery—a milestone in food safety. Meanwhile, the Dairy Council of California, active since 1919, continues to promote nutrition education and sustainable dairy systems for healthier communities.

California's milk safety program combines federal guidelines with state-level innovations to maintain strict oversight. From farm practices to blockchain tracking, each step ensures consumers receive a product that is both nutritious and secure.
