An Israeli food-tech startup called Yeap is turning waste into high-value protein. By repurposing discarded yeast, the company has created a sustainable ingredient for plant-based foods. Its first products are expected to launch before the end of 2022. Yeap extracts protein from yeast that would normally be wasted or used as animal feed. The process requires little new equipment, keeping production costs low. Several food manufacturers have already signed long-term contracts to buy the ingredient.

The company’s main product is a yeast-based protein with a neutral taste and strong emulsifying properties. It can replace eggs in recipes, simplify ingredient lists, and improve the texture of alt-dairy products. Its protein digestibility score (PDCAAS) of 0.95 matches many traditional protein sources. Yeap has also developed a second product from the leftover fibrous material. This blend contains beta glucans and additional proteins, expanding its potential uses. The ingredients can be added to condiments, protein bars, baked goods, and plant-based meats without altering flavour or structure.

Yeap’s upcycled protein is set to enter the market within months. The ingredient offers food producers a cost-effective, sustainable alternative to conventional proteins. Its versatility could help reduce waste while meeting demand for cleaner-label products.
