Arpita Basu presented findings on freeze-dried strawberries and their impact on blood sugar control. Her study found that adults with prediabetes experienced reduced inflammation and oxidative stress after consuming the berries. Researchers also examined polyphenols in strawberries, compounds known to combat oxidative damage, and the hypoglycemic effects of red berries more broadly. While much of the existing work on berries and brain health comes from large-scale reviews—such as a Harvard study in *JAMA Neurology* showing the DASH diet (which includes berries) cuts cognitive decline risk by up to 41%—few trials have focused solely on strawberries. The symposium aimed to bridge this gap, encouraging more targeted research into the fruit's specific benefits. The California Strawberry Commission, representing over 300 farmers, shippers, and processors, supports initiatives in workforce training, production research, and nutrition science. Their goal is to strengthen the industry while promoting strawberries as a key part of a healthy diet.
