Recent studies have explored how production methods affect taste, nutrition, and cost—revealing some surprising findings. A 2020 study found that farm-produced eggs received the highest sensory ratings, outperforming both free-range and white-shell cage eggs. Consumers in the same study ranked yolk colour as the most important factor when choosing eggs, even over farming labels.

Nutritional differences between egg types are often small. A 2021 study showed free-range eggs had slightly more cysteine and less cholesterol than conventional ones, but protein levels stayed the same. The American Egg Board also notes that terms like 'free-range' don’t guarantee major nutritional benefits. Price, however, doesn’t always match nutritional value. Brown eggs, for example, can cost more simply because the hens laying them are larger. Meanwhile, eggs labelled 'nutrient' or 'nutritionally enhanced' come from hens fed fortified diets, boosting their vitamin and mineral content. A standard large white egg still provides about 6 grams of protein and 70 calories, regardless of farming method. How eggs are produced also shapes consumer perceptions. The 2020 study highlighted that production methods influence beliefs about safety and taste, even when actual differences are minimal.

While farming practices affect egg prices and some nutritional details, the differences are often minor. Consumers prioritise yolk colour and production labels, but sensory tests suggest farm eggs may be the most preferred. For those seeking extra nutrients, fortified feed options offer a clear advantage—without relying on farming labels alone.
