The bulbous plant can be eaten raw or cooked, offering a crunchy texture and mild, slightly sweet flavour.

Kohlrabi belongs to the same family as cabbage and Brussels sprouts. Its bulb can be served raw with dips, sliced into salads, or cooked in various ways—roasted, sautéed, steamed, or grilled. When raw, it has a crisp bite with a hint of pepper, while cooking softens its texture, making it a good addition to soups, stir-fries, or even mashed potatoes.

A single cup of raw kohlrabi delivers nearly the full recommended daily intake of vitamin C. It also contains high levels of insoluble fibre, which aids digestion and helps prevent constipation. The vegetable is rich in polyphenols and glucosinolates, compounds linked to antioxidant and antibacterial effects that may reduce cancer risks.

Despite its benefits, overconsumption can lead to bloating and gas due to its complex fibres. Kohlrabi is also high in vitamin K, which can interfere with blood-thinning medications if eaten in large amounts. However, it is considered low in histamine, making it a potential option for those on restricted diets—though medical advice is recommended before making dietary changes.

In North America, kohlrabi remains a specialty item. Its popularity hasn't grown significantly in recent years, staying mostly within health-focused and ethnic communities rather than entering mainstream diets.
